Recipes for Halloween from Regina Burd

Pumpkin cupcakes
Ingredients:
Pumpkin puree — 1 tbsp.
Egg — 2 PCs.
Vegetable oil — 100 ml.
Sugar — 1 tbsp.
Flour — 250 gr.
Brown sugar — 2 tbsp
Salt — 1 tsp
Baking powder — 1,5 tsp
Cinnamon — 0.5 tsp.
Cloves, allspice, nutmeg — ¼ tsp
Preparation:
1. In a bowl beat with a mixer eggs, pumpkin puree, vegetable oil and sugar.
2. In another bowl mix the remaining dry ingredients.
3. Combine both mixtures and stir, we should get a homogeneous dough.
4. A little slush molds for cupcakes, pour batter.
5. Bake at 180 degrees for 20-25 minutes.
6. Decorate cupcakes the worst possible decor and serving.
Fresh caramel apples
Ingredients:
Apples — 6 PCs.
Sugar — 500 gr.
Lemon juice
Water — 2 tbsp
Butter — 100 gr.
Preparation:
1. My apples, let them dry, and then in each Apple insert a bamboo skewer near the petiole.
2. In a pan melt the butter, add sugar, water and lemon juice. Cook the caramel, stirring constantly, until then, until the sugar is completely dissolved and the mixture becomes brown in color.

Pumpkin fondue
Ingredients:
Pumpkin — 1 PC.
Onion — 1 head
Garlic — 1-2 cloves
Mushrooms — 200 gr.
Dry white wine — 150 ml.
Sage — a pinch
Cream — 150 ml.
Cheese — 600 gr.
Olive oil — 5 tbsp
Corn flour — 1 tbsp
Chili pepper — 1 PC. (optional)
Sage — a pinch
Salt, pepper — to taste
Preparation:
1. Pumpkin wash, cut off the tip of widely. With a spoon take out the fiber and seeds, the pulp is left behind.
2. Grease the inside flesh with salt, pepper and a little olive oil. Tuque bake whole in the oven at 180 degrees for 45 minutes.
3. Chop the onion and mushrooms, fry, add the garlic and chilli as desired. When the mushrooms are ready, add the wine and bring mixture to a boil. Boil until the smell of alcohol.
4. Mix flour, grated cheese, cream, and sage. Add the mushrooms. Mix everything.
5. Pour the finished mixture into the baked pumpkin and serve immediately on the table.
6. Serve table by the spoons with long handles to allow guests to get pumpkin pulp. Put on the table crackers and fresh vegetables.
Pumpkin chips
Ingredients:
Pumpkin
Vegetable oil
Spices
Preparation:
1. Cut the pumpkin flesh pieces of 7×1 cm.
2. Heat vegetable oil in a deep fryer to about 160 degrees.
3. Drop the slices of pumpkin fried in small batches, fry for three minutes.
4. Spread the slices on absorbent paper.
5. Before serving sprinkle with your favorite spices and herbs.
Appetizer of pumpkin
Ingredients:
Pumpkin — 500 gr.
Pumpkin seed oil — 3 tbsp
Pumpkin seeds — 3 tbsp
Garlic — 2 cloves
Salt and pepper to taste
Preparation:
1. Pumpkin my, clean, cut into thin and long sticks.
2. Coat the baking pan with baking paper, spread it on wedges of pumpkin. Preheat the oven to 170 degrees bake the pumpkin for 20 minutes.

Ingredients:
Flour — 3 tbsp.

Baking powder — 3 tsp
Pumpkin puree — 2 tbsp. (or pumpkin 250-350 gr.)
Eggs — 2 PCs.
Vanilla — 2 tsp
Milk and 2.5 tbsp.
Cream — ½ Cup
Honey — 3 tbsp
Spices — 1 tbsp
Any nuts — ½ Cup
Preparation:
1. Mix baking powder, 3 cups flour, sugar and salt.
2. Make pumpkin puree. To do this, heat the pumpkin in the microwave to become soft, remove skin, cut into pieces and using a blender make pumpkin puree.
3. Add to mashed eggs, vanilla, milk and spices. Stir until smooth.
4. In dry mixture of flour and pour the pumpkin puree and mix everything together with a spoon. If is too thick, add milk. The consistency of the dough should be slightly thicker than for ordinary pancakes.
5. Heat the pan, grease with butter or vegetable oil. With the help of a spoon pour into the pan the batter in small pancakes. Fry the pancakes on both sides until Golden brown.
6. Mix the cream and maple syrup, beat with a blender until creamy.
7. Pour the prepared crepes with cream and sprinkle with chopped nuts. Dessert for Halloween is ready!
