Hake in Galician with a baked potato with garlic sauce

Excellent dietary fish, the hake is very popular in Spain. One of the cooking options — bake in the oven with steamed vegetables and potatoes

You will need:

– 1 hake medium size;

– 1 onion;

– 1 leek;

– 1 tomato;

– 1 small carrot;

– parsley — 1 small bunch;

– thyme — 1 sprig;

– garlic — 3 cloves;

– butter — 40 g;

– olive oil for frying;

– white wine — 150 ml.

In a pan sauté in olive oil the finely chopped onion and garlic, add carrots, grated on a coarse grater.

Tomatoes scald with boiling water and remove the skins, chop and add to the pan. Sprinkle with chopped herbs, salt and extinguish with white wine for 10 minutes.

Preheat the oven in advance to 200 degrees into the oven put the foil-wrapped potatoes for baking (or just good potatoes). Potatoes for baking baked quickly in a period of 35 minutes, other varieties can be baked longer. Try to test the softness of the long, sharp knife or fork. When potatoes are ready, unwrap the foil, take a knife a slit crosswise and press down on the edge.

In refractory form put the vegetables, then sliced pieces of fish, season with salt, sprinkle with chopped greens and put on each piece a small slice of butter.

25 minutes until the potatoes are done place in oven fish.
