Chalop — Uzbek hash

This soup is prepared on the basis of a fermented milk product katica. The hash can be used not only as soup but also as a sauce or a snack.

Ingredients: a few sprigs of fresh Basil Burgundy, 1 Cup katika, 500 ml of cold boiled water, 1 kg of cucumbers, 7 of radishes, ½ bunch cilantro and green onions, 1 tbsp lemon juice, salt, freshly ground black pepper, 1-2 cloves of garlic.

Method of preparation: chop the herbs, add salt and carefully knead. Squeeze the garlic and mix well. Cucumbers and radishes cut into fine strips and add to the greens. Sour cream and water to combine and whisk. Pour vegetables and herbs. Season with salt and pepper and pour over the lemon juice. Remove for 20 minutes in the refrigerator.

Matsnabrdosh — Armenian okroshka

Armenian okroshka is prepared on the basis of yoghurt. And often served not as a soup but as a beverage in the glass.

Ingredients: 400 ml of yogurt, a glass of sparkling water, 3-4 cucumber, ½ bunch cilantro, dill and green onions, a few leaves of fresh mint, few leaves of fresh Basil, and salt.

Preparation: greens finely crumble. With cucumbers remove the skin and cut into small cubes or strips. To combine greens and cucumbers, add salt and mix well. Yogurt to dilute the soda water and whisk. Pour hodgepodge. Serve in plates and in glasses.

One can — Azerbaijani hash

One can fill with yogurt, ayran or yoghurt. In different places the soup is cooked in different ways: put the boiled beef and eggs, but somewhere cost herbs and vegetables. Cilantro is often replaced by radishes.

Ingredients: 500 ml of yogurt, 500 ml of cold boiled water, 3 cucumber, 1 egg, 300 g beef, ½ bunch of green onions, dill and cilantro, salt.
