You will need:
– 3 small eggplants (better to take smaller, younger eggplants);
– 2 tomatoes-cream;
– 1 bell pepper;
– 1 onion;
– 2 cloves of garlic;
– 1 small carrot;
– 3 tbsp vegetable oil for frying;
– spices: salt (a little less than a teaspoon), sugar 1 dessert spoon vinegar 1 dessert spoon black pepper — pinch;
– parsley and Basil — to taste.
Eggplant bake in the oven for young eggplants is about 30 minutes at 200 degrees. If you have larger vegetables, increase the cooking time by 5-10 minutes. Remove from oven and allow to cool slightly.
At this time, in a pan sauté on low heat in vegetable oil finely chopped onion, garlic and carrots. Carrots to grate on a coarse grater. After 8-10 minutes, add chopped pepper and tomatoes and simmer for another 5 minutes.
Remove the eggplant peel, cut into cubes about 1 cm and put in the fried vegetables. Add salt, sugar, pepper and vinegar, stir and bake for another 3-4 minutes.
