Unusual recipes vinaigrette

The name of this cold snacks comes from the French vinaigre (vinegar), they were adorning the salad. But cooking options are many, chose the most interesting

The salad was invented, probably in Germany or Sweden. There is a Swedish salad recipe from 1845, which was prepared from a boiled beet, potato, herring, egg whites and grated Apple. The famous historian and expert in Russian cooking, William Pokhlebkin wrote that in the nineteenth century roots — carrots, beets, potatoes and turnips — considered unclean because they grow underground, and therefore is afraid of raw, only boiled. And to kill their "earthy" flavor to the vegetables, added pickles and sauerkraut pickled mushrooms and herring. In the recipe of the Russian salad also included chopped egg and grilled beef.

Salad with egg and mustard dressing

Ingredients: 1-2 beets, 1 carrots, 2-3 potatoes, 1 herring, 1 egg, 1 bunch of green onions. For the filling: 1 tbsp vegetable oil, 1 egg, 1 tsp mustard, ½ tsp of vinegar, a few capers, salt.

Method of preparation: boil the beets, potatoes and carrots. Peel and cut into equal cubes. Two eggs to boil. Leave one yolk for the filling, the rest finely chopped. Herring cleaned, remove bones, fillet cut into small cubes. Green onions chopped. All the ingredients to combine. Mix well. Prepare the filling: grind the cooked yolk, add oil. Stir until smooth. Season with a little salt. Add the mustard and vinegar. Mix well. Add capers. To fill the vinaigrette.

Tip: sliced beets best to separate the butter and then combine with the remaining ingredients. Then the rest of the vegetables will not change its color.

Vinaigrette with salted mushrooms

Ingredients: 2 beets, 2 carrots, 2 potatoes, 1 onion, 100 g pickled mushrooms (can be pickled), ½ bunch of green onions. For the filling: 1 tbsp oil, 1 tsp mustard, ½ tsp of vinegar.

Method of preparation: carrots and boil potatoes, boil beetroot in a separate pan. Peel the vegetables and cut into equal cubes. Onions finely chop. Add to the vegetables. Mushrooms finely chop and place in vinaigrette. Prepare the filling by combining ingredients. Finely chop the onion. Season the salad and sprinkle with green onions.

Tip: the vinaigrette with pickled mushrooms, and pickled cucumbers, it is better to cook at once. Experts believe that such food is poorly stored, and you can get an intestinal disorder.
