It is a lean and extremely healthy dish. But unpolished rice is great for those who want to lose weight: 100 gr approximately 350 kcal
It is believed that red rice has a strong anti-inflammatory action. Shell red rice grains soft, so cooked red rice is easily digested by the body.
You will need:
— water in the ratio 1: 2.5 by volume;
— salt to taste;
— olive oil with white mushrooms (or just good olive oil);
— carrots — 1 piece;
— onions — 1 piece;
— vegetable oil — 2 tbsp. spoon;
— tomato paste, canned or fresh tomatoes 2 tbsp;
— wine vinegar — ½ tbsp;
— sugar — ½ tbsp;
— parsley, oregano (fresh or dried).
Wash the rice under running water until the disappearance of the muddy water, then pour it into a thick-walled pot with a lid. Pour the washed rice water: it must cover the grain on two fingers. Add salt to taste, allow to boil and on low heat cook for 40 minutes. Add 1 tbsp. of olive oil, infused white mushrooms, or just good olive oil. Ready red rice keep under cover for another 10-15 minutes until the swelling.
Until the rice swells, prepare the vegetables. Finely chopped onion overcook minced in vegetable oil until transparent, add carrots, grated on a coarse grater and fry for another 5 minutes. Then add the tomato paste, vinegar, sugar, finely chopped greens and simmer for another 15 minutes.
On the plate put the rice, sprinkle with a little lemon juice and put on top of steamed vegetables.
